Angel Cake - Recipe 天使蛋糕 - 食譜

Ingredients:

  • 1 cup Cake flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 8 eggs (separate egg whites and egg yolks in 2 large bowls)
  • ¾ cup of sugar
  • 1 Tbsp of sugar to add to egg white while beating
  • 1/3 cup water
  • 1 tsp vanilla extract
  • ¼ cup of tasteless cooking oil
  • 1 tsp cream of tartar

Lightly oil tube cake pan and preheat oven to 360 degrees.

 

Bowl 1:

  1. Mix Cake flour, baking powder and salt and sift 3 times and put aside.

  2. Egg yolks and sugar combine in stand mixer and paddle until creamy and light-yellow color.

  3. Add water, salt and vanilla extract to creamy mixture and paddle until well combined.

  4. Add oil slowly from edge of bowl, while mixer is on low.

  5. Add (a) to bowl and paddle until well combined.

Bowl 2:

  1. Sprinkle cream of tartar into egg white, use hand held mixer to beat from slow to fast until stiff.  During process add the 1 Tbsp sugar.

  2. Temper egg white by folding ¼ of the egg and flour mixture until combined.

  3. Pour content of bowl 1 into bowl 2 and fold until well combined.

  4. Pour mixture into tube pan and bake for about 35 minutes.

  5. Test for doneness by using a long skewer to poke into the thickest part of the cake.  It should come out dry if cake is done.

  6. Remove cake from oven and invert gently on counter till completely cool before demolding.
